Whole Wheat Cranberry Muffins

While I was home I finally got to bake! I also roasted just about every vegetable in the grocery store.  If you missed a post, my current studio in LA lacks an oven. Sad, I know! But eventually in 2017 I’ll be getting a new apartment with an oven. Once that happens every recipe for a while will probably be nothing but foods prepared in the oven. Ha! Anyway I decided to whip up some muffins and they turned out delicious!

  • 1 1/4 Cup oats
  • 1 Cup whole wheat flour
  • 1/2 Cup oat flour
  • 1/2 Cup cranberries sliced in halves or quarters
  • 2 Tablespoons Truvia
  • 2 Tablespoons honey
  • 2 Teaspoons baking powder
  • 1/2 Teaspoon salt
  • 2 Eggs
  • 1 Cup unsweetened vanilla almond milk
  • 1/3 Cup unsweetened apple sauce
  • 1 Teaspoon vanilla


  1. Preheat oven to 375 degrees
  2. In one large bowl combine oats, wheat flour, oat flour, baking powder, trivia, salt.
  3. In a small bowl mix honey, eggs, vanilla, almond milk and apple sauce.
  4. Add the wet mixture to the dry and mix thoroughly.
  5. Added the sliced cranberries to the muffin mixture. (Trust me: slicing the cranberries may sound crazy but the muffins will be too tart with the whole cranberries).
  6. Spray muffin tin with non stick cooking spray or use muffin tin papers.
  7. Fill each space to the top with the muffin mixture.
  8. Bake 15-20 minutes.  Insert a toothpick in the middle of one muffin to see if they are done.  If nothing comes off with it they’re perfect!


These muffins are a bit more hearty and dense than the usual fluffy muffin.  But I definitely prefer it that way! Perfect for a mid day snack without all the extra added sugar.

    These look so tasty! I’m a huge fan of cranberries, but always forget to bake with them after Christmas.

      Same! I feel like they’re that fruit that many people use solely around the holidays and then sometimes forget about, including myself!
