Watermelon, Mint, Feta Salad

If you follow me on twitter (If not, what are you waiting for!) you will know that I over did it on watermelon a few weeks ago.  By that I mean I decided to buy an entire watermelon.  In theory sounds like a great idea. You’ll have a bunch of watermelon cut up and ready to go for snacking. What I forgot is that 1.) I am a single person, you can only eat so much watermelon at a time and 2.) I only have a mini refrigerator (the struggle!!!) so once I chopped up the watermelon, just about 75% of the mini fridge was occupied by watermelon.   I needed to find ways to spice the watermelon up and what better way then to add cheese to it!

WaterMelon, Mint, feta Summer salad recipe

Ingredients:

  • 4 Cups Chopped watermelon
  • 1/2 Cup feta cheese
  • 1/4 Cup Chopped fresh mint leaves

Directions:

  1. All you have to do is combine all ingredients and you’re good to go!

 

This is such an easy perfect dish for a picnic.  Everyone will love the sweetness of the watermelon combined with the saltiness of the feta, and the freshness of the mint.
