Vegan Tomato Cream Sauce with Spaghetti Squash

I’m such a huge fan of savory creamy sauces, but definitely not about all the butter and unhealthy ingredients involved in the making of those heavy creamy sauces.  I tried making cashew alfredo about 2 months ago.  Ever since I have been absolutely in love with it.  I could honestly put it on just about anything, or eat it by the spoonful! It’s moderately addicting! No worries though, I will eventually share that recipe with you, because wow it’s delicious! Until then you will have to try this tomato cream sauce I have created!

  • 1.5 Cups raw cashews
  • 1 -16 oz can crushed tomatoes with basil and garlic
  • 1 Large Spaghetti Squash
  • 2 Tablespoons Olive oil
  • Salt and pepper to taste
  • Optional: More fresh basil


  1. In a small bowl combine cashews with enough water to completely cover cashews.  Refrigerate and let soak for at least 4 hours or until cashews are nice and soft.
  2. In a food processor combine softened cashews,  1/4 cup water and 2 Tablespoons olive oil until completely smooth.
  3. In a sauce pan combine can of tomatoes with cashews sauce and heat through. Add salt and pepper as desired
  4. Put spaghetti squash into microwave whole.  Cook in 5 minute increments, rotating every time until spaghetti squash is soft, and easy to cut through.  Scrape out the “spaghetti” with a fork.
  5. Top spaghetti squash with tomato cream sauce and extra basil if desired.




The sauce is very easy to make ahead of time and stays great in the refrigerator.  You can also put the tomato cream sauce over whole wheat pasta and add some chicken in there if you aren’t vegan!
