Creamy Vegan Spinach Alfredo Pasta

As a kid I always remember ordering fettuccine alfredo whenever my family and I would go out to Italian restaurants. As I was growing up, getting more into running, and more into fueling my body to perform optimally, I realized just how bad that alfredo sauce is for you. Packed with tons of bad fats and have creams. However, recently I discovered you can make a creamy vegan pasta sauce out of cashVegan Spinach Alfredo Pasta Sauceews as I mentioned in my Spaghetti Squash with Tomato Cream Sauce recipe. It doesn’t include any butter or heavy creams, just a whole lot of deliciousness!

Vegan Spinach Alfredo Pasta

Vegan Spinach Alfredo Pasta

 

Ingredients:

  • 1 Box Whole Wheat or any other pasta option you may enjoy
  • 12 Cups(or 1 large bag) spinach
  • 2 Cup cashews
  • 1 Cup water
  • 2 Tablespoon garlic
  • 5 Tablespoons extra virgin olive oil
  • Salt and Pepper

Directions:

Cashew Cream Sauce:

  1. Soak cashews in a bowl of water for 4-8 hrs (I do it over night or before I head out for the day).
  2. Drain cashews.
  3. In a food processor, combine cashews, water, garlic, olive oil and blend until creamy.  Add additional water for desired consistency.
  4. Add salt and pepper to taste

Pasta:

  1. Cook pasta as per instructions and drain.
  2. In a Sauce pan wilt down spinach.
  3. Combine pasta, spinach and cashew sauce.

 

Enjoy!

I am moderately addicted to the cashew cream sauce, so expect it in many other recipes!

    YUM – I never would have thought to use cashews. I must give this a try!

    Haha yes! I would always order it too! (One time I had my first and only choking experience as a kid eating it (but that never deterred me!)
