Sweet Potato Pizza with Caramelized Onion & Arugula

Happy Wednesday and thank goodness it’s almost the weekend! Who doesn’t love a good pizza? It’s such a comforting, warming food. Paired with a nice glass of wine or a beer and it sounds like the perfect way to end the work week to me!  This sweet potato pizza with caramelized onion and arugula is jam packed with veggies as well as delicious flavors.

Sweet Potato Pizza with Caramelized Onion & Arugula

Ingredients:

  • Whole wheat pizza dough ( I buy remade from Trader Joe’s)
  • 1 Large yellow onion
  • 1 large sweet potato
  • 2 Cups fresh Arugula
  • 3 Tablespoons olive oil
  • 1 Tablespoon minced garlic
  • 1/2 Cup grated romano cheese
  • 1 Tablespoon dried basil
  • Salt & Pepper to taste

 

Directions

  1. Preheat oven to 375 degrees.
  2. Lightly coat baking pan with a tiny bit of olive oil so the crust doesn’t stick to the pan.
  3. Roll out pizza dough and place on pan.
  4. In a frying pan saute onion until caramelized.  Add garlic and cook for another minute.
  5. Add arugula to onion mixture and saute until completely wilted (about 3-5 minutes) as well as the basil, salt & pepper.
  6. While the onions are being cooked.  Thinly slice sweet potatoes into small circular wafers.
  7. Lay the sweet potato on the pizza dough in an even later.
  8. Bake for 5 minutes.
  9. Evenly top the pizza with the arugula mixture as well as the Romano cheese.
  10. Bake for another 5-10 minutes depending how crispy you like the crust.

    Any pizza topped with arugula is my favorite! Maybe I’m just fooling myself into thinking it’s healthy 😉 This looks tasty though; I need to try Trader Joe’s dough!
