Spinach & Feta Chicken Roulade

I needed to change things up for dinner a bit. I was watching worst cooks in America on the Food Network, where they tried to make Chicken Roulade. Which essentially is stuffed chicken all rolled up with delicious flavorings and ingredients inside. I was inspired to make my own Chicken roulade. And who doesn’t love feta and spinach!

Feta and Spinach Chicken Roulade

Ingredients:

  • 4 Chicken Breasts
  • 1 Package Frozen thawed Spinach
  • 1/2 Cup Crumbled Feta
  • 1/4 Tsp. Chopped Garlic
  • 1/8 Tsp. Oregano
  • Rosemary
  • Salt and Pepper

Directions:

  1. Preheat oven to 350 degrees.
  2. Pound out chicken till thin, but not broken through.
  3. Prepare stuffing by combining spinach (water drained after thawed), feta, garlic, and oregano.  Mixed until evenly blended. Season with salt and pepper to taste.
  4. Put 1/4 of stuffing in the middle of each chicken breast and roll length wise.  Secure together with toothpicks
  5. Sprinkle top with salt, pepper, and rosemary
  6. Bake at 350 degrees, for 40-45 Minutes or until the chicken is completely cooked all the way through.
  7. Cover with tin foil and let rest for 5 minutes.
