Slow Cooker Buffalo Chicken Sandwiches

Being from Buffalo, it’s only natural for me to love chicken wings. The thing with chicken wings is that they are deep fried and end up being not healthy at all. Being in Los Angeles, I have yet to find delicious chicken wings, but constantly crave that Buffalo sauce. I found the perfect, and healthy way to do so in a delicious sandwich!  Not only is it delicious but it is incredibly easy to make.  Pop it in the slow cooker and you’re good to go!

Ingredients:

  • 4 large chicken breasts
  • 1- 12 oz Bottle Franks Red Hot Buffalo Wing Sauce
  • 1 Packet Hidden valley ranch dressing mix
  • 1/2 Cup water (or milk)
  • Whole wheat hamburger rolls

Directions:

  1. In a slow cooker combine hot sauce and chicken.  Let cook for 2 hours on high.
  2. In a small bowl mix together ranch dressing mix with water (or milk).
  3. Mix ranch mixture in with chicken and hot sauce and let cook on high another 2 hours.
  4. Shred chicken with forks as it should fall apart rather easily.

 

Ranch isn’t typically a chicken wing match made in heaven (although I learned in California it’s the popular thing to do) but it needed some other flavors with it and blue cheese dressing is not a healthy option.  If you want to leave it in there while you are at work you can cook on low for 8 hours but be sure to add some extra water or milk to it, because it will likely dry out.  Also, warning there is a bit of heat to this dish. So if spicy foods aren’t your thing, try replacing half the hot sauce with milk or water to mellow that spice out a bit.
