Shrimp Tacos

Tacos are my favorite food! They are so versatile and can use such fresh ingredients. All rolled up into a blanket of deliciousness! Original beef tacos can often be heavy, and I tend to like this more during the winter. So I decided I wanted to “summerfy” my favorite food. Make it lighter and make it with a lot of delicious fresh ingredients!

Ingredients:

  • 1 Package soft corn tortillas
  • 20 Raw Shrimp thawed without veins and shells
  • 1 Bag any type of pre shredded slaw ( I used broccoli)
  • 1 Single serve plain greek yogurt
  • 2 Tablespoons Lime juice
  • 1/4 Cup Fresh Cilantro
  • 1 Tablespoon Olive Oil
  • 1 Tablespoon cumin
  • 1 Tablespoon chili powder
  • 1/2 Tablespoon onion powder
  • Salt and pepper

Directions:

  1. In a food processor mix together greek yogurt, lime juice, cilantro, olive oil and salt & pepper for slaw dressing.
  2. Mix together slaw and slaw  dressing. Refrigerate for 1 hour.
  3. Mix together cumin, chili powder, onion powder, and salt & pepper.
  4. Coat shrimp liberally with seasoning mix and set aside for 30min to 1 hour.
  5. Cook shrimp until done.
  6. Lay slaw and shrimp on tortilla. Enjoy!
