Shrimp Scampi With Zucchini Noodles

The summer months always make me want to eat more and more seafood.  Seafood is always so fresh and light to me.  The perfect summer meal when you’re out by the pool or beach all day.  But original shrimp scampi with regular pasta tends to be a bit more heavy, often a perfect comfort meal in the colder months.  I have transformed a normal shrimp scampi into the perfectly flavorful summer dish.

Makes enough for 2-3 people

Ingredients:

  • 4 Large Zucchini Spiraled using zucchini noodle maker
  • 20 Small cooked shrimp thawed
  • 1 Cup white wine (I used sauvignon blanc)
  • 1/4 Cup Olive Oil
  • 1 Tablespoon minced garlic
  • 1 Teaspoon lemon juice
  • 1/2 Teaspoon whole wheat flour
  • Salt and Pepper to taste

Directions:

  1. Cook the spiralized zucchini like regular pasta for 5 minutes.
  2. In a sauce pan cook white wine, olive oil, garlic, lemon juice, salt and pepper.
  3. Add flour and let thicken slightly.
  4. Add shrimp and cook for 3-6 minutes.
  5. Add cooked zucchini to sauce pan and cook for another 2 minutes.
  6. Enjoy!
