Peanut Butter Oat Pancakes

I have never been  huge fan of pancakes for the sole purpose that between the pancakes and syrup they just seem way to sweet for me.  And that’s coming from someone who has a huge sweet tooth!  I have changed a classic pancake recipe up and used oat flour instead.  They’re slightly more dense than classic pancakes but certainly just as delicious!

Peanut butter Oatmeal Pancakes- Banana, almond milk, oat flour, healthy, gluten free, egg

 

Ingredients:

  • 1.5  Cups oat flour (ground oats in food processor)
  • 2 Eggs
  • 1/2 Teaspoon Cinnamon
  • 1/2 Teaspoon Truvia
  • 1/4 Cup unsweetened vanilla almond milk
  • 1/2 ripe banana
  • 2 Tablespoons creamy peanut butter

Directions:

  1. Combine oat flour, cinnamon, truvia.
  2. In a blend blend together almond milk, banana, peanut butter.
  3. Add almond milk mixture and eggs to dry ingredients and mix completely.
  4. Cook pancakes in frying pan or griddle until fully cooked through. (will depend on stove settings)

    I love adding oats to my pancakes, makes them so much healthier and I don’t feel quite so bad about indulging 😉
