Chicken fingers are a popular food not only among children but also adults.  However, chicken fingers are not always the best option, deep fried and coated in heavy crusts.  I decided to create a  recipe based off chicken fingers with a healthier twist so this doesn’t have to be your cheat meal of the week.

Healthy Oat Crusted Chicken fingers recipe

Ingredients:

  • 2 Chicken breasts cut into long slices
  • 1/2 cup Whole oats
  • 1/2 cup Oat flour (easily blend whole oats in food processor)
  • 2 Eggs
  • Olive oil cooking spray
  • Salt and pepper to taste

Directions:

  1. Preheat oven to 375 degrees
  2. Mix together whole oats, oat flour, salt and pepper.
  3. Spray baking sheet with olive oil spray
  4. Set up an assembly line. First dip the chicken pieces in egg, then dip those pieces in oat mixture.
  5. Lay chicken flat on baking sheet.
  6. Spray tops with olive oil spray to help brown.
  7. Cook at 375 degrees for 30 minutes or until fully cooked through depending on thickness of chicken pieces.
  8. Serve with desired dipping sauces. Here I have served my chicken with a garlic parmesans greek yogurt sauce (Plain greek yogurt, garlic and parmesan cheese)
