Mexican Spaghetti Squash

Happy Monday everyone! I made this dish last week and have been dying to share it with you!  I LOVE spaghetti squash but it tends to be pretty bland without any seasonings with it. I had seen a few pictures of Mexican spaghetti squash pinned on pinterest, so I figured I would make my own recipe and add vegetables I enjoy in there as well!

 
Saute onions and bell pepper
 
Add tomato, corn and black beans.
 

Chop up cilantro.

 
Add the cooked spaghetti squash
Top with cheese and broil for 3 minutes.
 
Recipe
1 Large spaghetti squash
1 Small onion
1 Red bell pepper
1 Can black beans
1 Can crushed tomatoes
1 Can corn
1/2 Cup chopped cilantro
1/2 Cup Cheddar cheese
2 Tablespoons taco seasoning
1 Tablespoon chili powder
 
 
Directions
1. Cook Spaghetti Squash as normally do. (Differs depending on size and microwave)
2. In a pot saute onion and bell pepper in olive oil
3. Add corn, tomatoes, and black beans to mixture.
4. Add 2/3 of cilantro to pot.
5. Heat through.
6. Shred spaghetti squash and add it to the pot.
7. Heat thoroughly.
8. Add 1/4 cup shredded cheese to mixture.
9. Take mixture and place it back into the spaghetti squash skins.
10. Heat oven to Broil
11.  Top with remaining cheese and cilantro and broil for 3 minutes.
 
 
 
This dish was seriously amazing! My family loved it as well!
