I have been on a quinoa kick for a while now, I have tested it in all sorts of dishes.  Quinoa is truly a great food to eat.  It is a complete protein.  This means that it has all essential amino acids making this perfect for vegetarians, vegans or people like me who don’t necessarily love meat.Quinoa salad recipe healthy

Quinoa salad recipe healthy

Ingredients:

  • 1.5 Cups Uncooked Quinoa
  • 1.5 Cups Water
  • 4 Large Carrots chopped
  • 1/2 Cup Craisins
  • 1/4 cup Romano Cheese
  • 2 Tablespoons Olive Oil
  • Salt and Pepper

Directions:

  1. Cook quinoa according to package
  2. Mix Carrots, craisins, romano, and olive oil with the quinoa
  3. Add salt and pepper to taste
  4. Let cool and refrigerate

It’s a super simple dish that’s perfect for a lunch and it’s also perfect because you can make a hole batch at once and have enough for lunches all week long.
