Lemon Meringue Cookies

The weather has been getting warmer and warmer in Los Angeles recently.  And when I think warm weather I think fresh fruits and especially of the citrus variety.  While thinking of what I wanted to make for this week, I also wanted some comforting food as well.  Which lead me to make these absolutely delicious lemon meringue cookies.  They’re soft, moist and deliciously lemony.

Lemon Meringue healthy cookies- Whole Wheat recipe

 

Ingredients:

  • 1 Cup Whole Wheat Flour
  • 1/2 Cup almond flour
  • 1/2 tsp baking soda
  • 7 packets of truvia
  • 1/4 tsp salt
  • 1-  5-6 oz cup of lemon meringue or lemon greek yogurt
  • Zest of 2 large lemons
  • Juice of 1 large lemon
  • 1/2 tsp vanilla
  • 2 Tbs Brown Sugar
  • 2 Tbs Melted butter
  • Almond milk if needed

 

Directions:

  1. Preheat oven to 375 degrees
  2. Mix together dry ingredients
  3. Mix together wet ingredients
  4. Mix wet and dry ingredients together
  5. If needed add a splash of almond milk
  6. Bake at 375 for 25-30 Minutes until golden on the bottom

 

These are a perfect alternative to a high fat, high sugar dessert, making it a great snack anytime of the day.
