One Pot Kale Pasta

Some weeks are crazier than others. Which means sometimes you need a quick, super simple, but delicious meal to throw together! I was making my kale recipe one day and thought why not turn this into a full balanced meal?   Here is the deliciousness I came up with!

Ingredients:

  • 1 Large bag kale
  • 1 Tablespoon minced garlic
  • 3 Tablespoons olive oil
  • 1 Tablespoon lemon juice
  • 5 Cups Water
  • 1 Lb Box angel hair whole wheat pasta
  • 2 Large chicken Breast cut into small bite size pieces
  • Salt and pepper to taste
  • Romano Cheese

Directions:

  1.  In a large pot combine kale, lemon juice, garlic, olive oil and water.
  2. Cook on medium heat for 10 minutes.
  3. Add pasta to the cooked kale and cook pasta until completely cooked.
  4. In a separate sauce pan cook chicken until cooked through.
  5. Add chicken to pasta.
  6. Add salt and pepper to taste and top with romano if desired.

 

 

Cooking the pasta with the kale gave it and incredible flavor! Definitely an easy and inexpensive weeknight meal to prepare for the whole family!
