Healthy Summer Chicken Salad

Sandwiches are a go to during the summer.  They’re quick and simple to throw together and have a picnic lunch. However, deli meat can get boring and sometimes it’s nice to spice things up a bit and add a bit of flavor to your day.  Usually chicken salad is loaded with mayonnaise, which can be extremely unhealthy.  I decided to whip up a healthier alternative to the normal chicken salad.

Ingredients:

  1. 2 Large Chicken Breasts cut into small pieces and cooked
  2. 1 Small single serve cup of plain greek yogurt
  3. 1/2 Small Red onion diced
  4. 1 Small Gala Apple
  5. 1/4 Cup slivered almonds
  6. Salt and pepper to taste

 

Directions:

  • After chicken is cooked and cooled, mix all ingredients together in a bowl.
  • Serve on a sandwich, with crackers or by itself.
