Just in time for some Cinco De Mayo Celebrations, a healthy Mexican flavor inspired dish!

Ingredients:

  • 1- 15oz Can Fire Roasted Tomatoes
  • 1- 15 oz Can Black Beans, drained
  • 1- 15 oz Can Corn, drained
  • 2 Cups Dry Brown Rice (Cooked)
  • 1 Large White Onion Chopped
  • 1 Large Green Bell Pepper Chopped
  • 4 Chicken Breasts cut into bite size pieces- cooked
  • 2 Avocados for garnish
  • 1 Single serve container plain greek yogurt
  • 1 Tablespoon Cumin
  • 1 Tablespoon Chili Powder
  • 3 Tablespoons Cilantro
  • 1 Teaspoon Sriracha
  • 1/2 Cup Dhredded Cheddar Cheese
  • Salt and Pepper to Taste

Directions:

  1. Preheat oven to 350 degrees.
  2. Saute onions and peppers until cooked.
  3. Combine rice, black beans, corn, onion, pepper,  and chicken.
  4. In a separate bowl combine, tomatoes, greek yogurt, cumin, chili powder, sriracha, cilantro, salt and pepper.
  5. Combine sauce with rice mixture.
  6. Top with cheddar cheese.
  7. Put in casserole dish and cover with tin foil.
  8. Bake for 35-45 Minutes until warmed through.
  9. Top with chunks of avocado and extra cilantro if needed.
