Creamy Potato Salad

Hello all! Hope you are having the loveliest of weeks!  Sometimes you just crave some of those delicious summer barbeque foods.  I decided to create a twist on the classic potato salad and healthify it up a bit!

Healthier Potato salad recipe- Greek yogurt, green onion, dill, dijon mustard

 

Ingredients:

  • 6 Large red potatoes cut into bite size pieces
  • 2 small cups (about 5 oz cups) of plain greek yogurt
  • 1/2 Cup diced green onion
  • 1/4 Cup diced fresh dill
  • 2 Tablespoons dijon mustard
  • salt and pepper to taste

Directions:

  1. Bring a large pot of water to a boil, add potatoes and boil potatoes for 10 minutes or until soft.
  2. Let potatoes drain and cool completely.
  3. In a separate bowl, combine: greek yogurt, dill, green onion, dijon, and salt & pepper.
  4. Combine greek yogurt mixture and potatoes.
  5. Let sit in the refrigerator for at least an hour for the flavors to blend.
