Healthier Loaded Mashed Potatoes

Growing up mashed potatoes were by far my favorite food. I could down plates of mashed potatoes at thanksgiving. Honestly little Amanda, puts adult Amanda to shame with how much she could eat. Ha! As delicious as mashed potatoes are, they are often made with a lot of butter, creams and other unhealthy ingredients. I needed to find a way to eat mashed potatoes without feeling like crap after from all the unhealthy ingredients. There’s often negativity surrounding potatoes because people think they are unhealthy for you just because the higher carb count. But they pack so many important nutrients, fiber and are low in calories!

  • 5 Cups cubed red potatoes
  • 5 Slices turkey bacon cut into small pieces
  • 1/4 cup extra sharp cheddars cheese shredded
  • 2 Tablespoons minced garlic
  • 3 Tablespoons extra virgin olive oil
  • 7 oz Container 2 % plain greek yogurt
  • 1/2 Cup unflavored almond milk
  • 1 cup chopped green onion
  • Salt and pepper


  1. Bring large pot of water to boil.  Add potatoes.  Cook 10-15 minutes or until potatoes are easy to break apart with a fork. Drain potatoes.
  2. In a frying pan cook turkey bacon until cooked through and crispy.
  3. In a large bowl mash and break apart potatoes with a fork, leaving some small chunks.
  4. Add olive oil, cheese and turkey bacon pieces to potato mixture and mix together.
  5. Mix in the green yogurt, almond milk and green onion.
  6. Add salt and pepper to taste.
