Gluten Free Double Chocolate Chip Cookies

There’s something so comforting about a cookie, the soft yet crunchy texture, and the melted chocolate inside really warm you to the soul.  I was really in the mood for cookies so I decided to whip these up.  With limited sugar, no butter and the use of oats instead of white flour it’s the perfect treat if you’re looking for something a bit more health conscious.

Gluten free double chocolate chip cookies

Ingredients:

  • 1 Egg
  • 1/4 Cup coconut oil
  • 1/4 Cup almond butter
  • 1/3 Cup brown sugar
  • 1/3 Cup white sugar
  • 1 Teaspoon vanilla extract
  • 1/2 Teaspoon baking powder
  • 1/2 Teaspoon baking soda
  • 1/2 Teaspoon salt
  • 3 Tablespoons unsweetened cocoa powder
  • 1.5 Cups gluten free oat flour (simply blend oats in a blender)
  • 2 Teaspoons almond milk
  • 1/2 Cup semi sweet chocolate chips

Directions:

  1. Preheat oven to 350 degrees Fahrenheit.
  2. In a large bowl beat together egg, coconut oil, almond butter, white & brown sugar, and vanilla extract until smooth.
  3. Mix in the rest of the ingredients.
  4. Form small balls and place them on a greased cookie sheet.
  5. Bake for 12-15 minutes.
