Dijon Zucchini

I was really in the mood for my dijon salad dressing, but with no lettuce in sight what would I put it on? So I chose the zucchini. 
 
I sauteed the bite size pieces of zucchini in some olive oil until soft (not mushy).
 
While that was on the stove I whipped up a batch of my dijon vinaigrette dressing.  Simple mix some onion, dijon mustard, apple cider vinegar, salt and pepper, and olive oil in a food processor and you have it.  Super simple and no additives like normal salad dressing.
Then you just pour a  bit of this vinaigrette on top until coated.  I like to sprinkle a tiny bit of romano cheese on top to give it a little more zing.
It was pretty delicious.  Gave the plain old vegetables a little more pizazz than the old steamed or roasted vegetables I usually turn to. Give it s try!
