Dijon Quinoa and Vegetable Salad

I used to eat oatmeal every day for lunch but I go through phases of just being so sick of oatmeal, and that time is now.  I wanted something refreshing, filled with veggies as well as a good source of protein.  So I came up with this delicious quinoa salad with a dijon vinaigrette.  It’s perfect for those hot summer days, and easy to make a large batch of it for the entire week! This salad is perfect for lunch because it keeps you filled up for a while, and cuts those mid afternoon cravings.

Ingredients:

Directions:

  1. In a saucepan cook quinoa according to package.
  2. In a large pot cook sweet potatoes in 1 tablespoon of olive oil until semi soft.
  3. Let quinoa and sweet potatoes cool to room temperature.
  4. Mix together, sweet potatoes, quinoa, brusel sprouts and carrots
  5. In a food processor, blend together vinegar, olive oil, dijon. Add salt and pepper to desired taste.
  6. Add the vinaigrette to the quinoa & veggie mixture and mix thoroughly.
  7. Chill in the refrigerator.
