Creamy White Bean Chicken Soup

You know what colder weather calls for?  A nice big bowl of steamy hot hearty soup.  A meal you can put in your slow cooker and come back to it hours later with a great comforting Sunday night meal.  Which is exactly what I did this Sunday.  I always love having a nice comforting meal to end the week.  This week it was this deliciously creamy soup.

Creamy White Bean Chicken soup recipe- Rosemary and potato

Creamy White Bean Chicken soup recipe- Rosemary and potato

 

Ingredients:

  • 2 Large chicken breasts
  • 2 Medium potatoes
  • 1 Large onion diced
  • 1 Tablespoon minced garlic
  • 2- 15 oz cans white beans
  • 1- 16 oz box of chicken stock
  • 1 Tablespoon dried rosemary
  • Salt and pepper to taste

Directions:

  1. Put all ingredients in large crock pot.  Cook on high for 4 hours.
  2. Remove chicken breasts and shred chicken with two forks into smaller pieces.
  3. Use a stick blender to partially blend the soup in the crock pot.
  4. Add the chicken back into the soup.
