It’s still a bit chilly this spring, even here in LA. It’s that perfect weather you can curl up on the couch with a blanket, watch a movie and eat a delicious bowl of comforting soup.  A perfect way to unwind on the weekend and relax. I whipped this soup up in not time. This sweet potato corn chowder is easy and quick to make and uses simple and healthy ingredients.

Creamy Sweet Potato Corn Chowder

 

Ingredients:

Directions:

  1. In a large sauce pan cook onions in olive oil until translucent.
  2. Add garlic and cook for another minute.
  3. Add sweet potato, half the corn and chicken broth. Bring to a boil. Simmer on low heat for 20 minutes.
  4. Using a hand held blender (or regular blender), blend ingredients until semi smooth.
  5. Add rosemary, sage and the rest of the corn and let simmer for 10 minutes.
  6. Add salt and pepper to taste.
  7. Top with plain greek yogurt and pumpkin seeds if desired.
