Coconut Popcorn

I love snack on popcorn! It keeps me full and satisfied for a long time. And popcorn can be such a great healthy snack, depending on how it’s made. I normally grab some skinny pop from the grocery store. But yesterday I was feeling extra adventurous and decided to try to make my own. I looked up online, exactly how to cook popcorn, without a popper and how to not burn it. There’s nothing quite as disappointing as burnt popcorn. Ew! So then I got on popping!

Instead of the normal heavy oils and butter used to cook and top the popcorn, I used coconut oil to cook the popcorn and then lightly salted it. I’m not one to shy away from the salt! The popcorn ended up turning out amazing!

Ingredients:

  • 1/4 Cup Popcorn Kernels
  • 1 Tablespoon Coconut Oil
  • Salt

Directions:

  1. Heat oil until melted and hot in a medium sauce pan with a lid.
  2. Add 3 kernels.
  3. Onc those have popped, the oil is hot enough to start popping the rest of the kernels.
  4. Add the kernels so it’s in a single layer on the bottom of the pan and cover.
  5. Leave off heat for 30 seconds.
  6. Put back on heat and gently shake a few times until all kernels are popped.
  7. Top with salt and enjoy!

    homemade popcorn is the best! I like topping mine with Nutritional Yeast.
