Cheesy Veggie Omelette

If you can’t tell, I am veggie obsessed.  So I love adding veggies to pretty much everything.  The good thing they go along with so many other foods, especially eggs!  And not only are eggs good for breakfast, I love eating eggs for dinner.  This recipe is perfect for dinner, since it’s a bit heartier, stuffed with a lot of veggies.

Cheesy Veggie Omelette Recipe


  • 3 Eggs
  • 1 Chipotle Laughing Cow Cheese wedge
  • 1/2 Roasted sweet potato
  • 1/4 Cup Frozen spinach-thawed and heated up
  • Salt and pepper to taste


  1. Roast Sweet potato at 400 degrees for 25 minutes or until cooked and browned.
  2. Wisk togethr 3 eggs. And cook eggs in one layer until cooked through.
  3. Once the egg is cooked through add the cheese, potato and spinach to one half.  Fold over other half of egg.
