Baked Sweet Potato Chips

Baked Sweet Potato Chips! I had no idea sweet potatoes came in white versions so I was pretty confused when I cut them open and they were not orange.  But hey, they taste EXACTLY the same so there is no complaining here!
Raw slices of sweet potato, sliced with a mandolin.  This was my first time using a mandolin, which was kind of frightening considering I am extraordinarily accident prone.  Luckily no fingers were lost!
Finished product!
2 Sweet Potatoes
1 Teaspoon salt
2 Teaspoons Cinnamon
2 Tablespoons Olive oil
1. Preheat oven to 250 degrees.
2. Slice Sweet Potatoes and cover with Olive oil.
3. Add salt and cinnamon.
4. Bake for 1- 1.5 hours or until golden brown

    I wonder if white sweet potatoes are a “new” thing because I saw them for the first time a couple months ago. I’ve been happily munching on regular ones for years and never came across such a thing. They certainly tasted great when I had them, but I wonder if we’re missing out on the beta carotene or other goodies in the orange variety.

      I wonder! I would assume that the nutritional value is relatively the same, but who knows! I’ll have to look into that 🙂
