Since moving to California avocados have become part of my daily routine. My go to weekend breakfast is avocado toast topped with an egg. I also add them to my salads or top my sweet potatoes with them. In addition, not gonna lie, I totally have just eat straight avocado with some salt on top. I truly just love the flavor of the avocados and the creaminess. I have seen a lot of fried versions of avocado fries all over Pinterest so I figured I would make some delicious baked ones. And oh boy does that crunchy make the avocados even more satisfying!

Baked Avocado Fries with Sriracha Aioli

Ingredients:

Directions:

  1. Preheat oven to 400 degrees.
  2. In a small bowl combine panko, cumin, and desired salt and pepper.
  3. Take the avocado slices and gently roll them in the panko mixture.  If needed press down on them lightly for the panko to stick better.
  4. Lay avocados in one layer on sheet pan.  Spray tops with olive oil spray to help with the browning of the panko.
  5. Cook 5 minutes per side or until slightly brown.
  6. In a small bowl combine greek yogurt and Sriracha.  Add Sriracha to make desired spice level.
