Avocado Pesto Sauce
I’m not sure if I have mentioned this before, but I have a huge love for basil. It’s just one of those herbs that makes your food taste so fresh and adds tons of flavor to every dish. Many people crave creamy pasta sauce because it is comforting. However, with a lot of those sauce comes heavy cream and butter, making the dish not healthy at all. The solution? Add avocado to make it creamy. Avocados contain healthy fats, which means they are fats we need (in moderation) in our diets to live. Adding avocado to a sauce automatically makes it super creamy and delicious. Now add basil and you are in town for one delicious recipe! The good news is, the recipe I am about to share with you is also super quick and easy. Making it perfect for a quick weeknight meal or perfect to serve to some friends.
- 2 Very ripe avocados out of skin
- 1/2 cup chopped basil
- 1/2 teaspoon garlic
- 1/4 cup grated romano cheese
- Olive Oil- As needed
- Blend all ingredients in blender. Start with 1/4 cup olive oil and add more if needed in order to combine all ingredients.
- Serve over pasta or even as an appetizer.
