Arugula & Pesto Pasta

Pasta and pesto, a love story.  There’s something about pesto that makes everything you put it on so much more delicious.  The taste of basil brings me back to when I was back at home growing basil plants in my backyard.  How I miss being able to go pick fresh herbs and vegetables from my garden.  This pasta combination combines the best of everything I love.  The crisp fresh arugula, the cheesy mozzarella, the sweet craisins and of course, the delicious basil pesto! Arugula Pesto Pasta- Craisins, mozzarella, whole wheat

Deiss cheese grater and zester

Look at this cool new tool I received from Deiss! It’s safe and easy to use, especially for those (me) who are pretty accident prone in the kitchen. It’s perfect for zesting and grating!  Works for cheese, citrus, garlic ginger, and even chocolate!  You can find it on amazon here.

 

Ingredients:

  • 1 Lb Whole Wheat or Quinoa Pasta
  • 2 Cups fresh arugula
  • 1 Cup diced aozzarella
  • 1/2 Cup craisins
  • 1/2 Cup Pesto
  • Romano cheese to taste

Directions:

  1. Cook pasta according to directions on the box.  Let cool completely.
  2. Mix the pesto and craisins with the pasta.
  3. Mix in arugula and mozzarella
  4. Top with romano cheese if desired

    That looks so fresh and delicious! I love how the salad is a lot of greens and some pasta instead of mostly pasta. I mean, I love me some pasta, haha, but this looks so yummy and much healthier. Your new tool sounds nice and your serving utensils are pretty too. 🙂

    This salad looks so good! This would make a terrific lunch dish to bring to the office, or a perfect light supper served with some warm bread.
